Veggie Lettuce Wraps are a fresh and healthy dish filled with sautéed vegetables and served in crisp lettuce leaves. They are perfect for a light meal or an appetizer that is both delicious and easy to make.
- 1 tablespoon vegetable oil
- 1 cup mushrooms, finely chopped
- 1 cup bell pepper, diced
- 1 cup carrots, shredded
- 1 can (15 oz) water chestnuts, drained and chopped
- 2 green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce (optional)
- 1 teaspoon ginger, minced
- Salt and pepper, to taste
- 1 head of iceberg or butter lettuce, leaves separated
- Sesame seeds (for garnish, optional)
- Sauté the vegetables: In a large skillet, heat the vegetable oil over medium heat. Add the chopped mushrooms, bell pepper, and shredded carrots. Cook for 3-4 minutes until the vegetables are tender.
- Add the remaining ingredients: Stir in the chopped water chestnuts, green onions, soy sauce, hoisin sauce (if using), minced ginger, salt, and pepper. Cook for an additional 2-3 minutes, stirring well to combine.
- Prepare the lettuce: While the filling cooks, rinse the lettuce leaves and pat them dry. Choose the largest leaves for wrapping.
- Assemble the wraps: Spoon the veggie mixture into the center of each lettuce leaf. Wrap the leaves around the filling like a taco.
