Veggie Lettuce Wraps

Veggie Lettuce Wraps are a fresh and healthy dish filled with sautéed vegetables and served in crisp lettuce leaves. They are perfect for a light meal or an appetizer that is both delicious and easy to make.

  • 1 tablespoon vegetable oil
  • 1 cup mushrooms, finely chopped
  • 1 cup bell pepper, diced
  • 1 cup carrots, shredded
  • 1 can (15 oz) water chestnuts, drained and chopped
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon ginger, minced
  • Salt and pepper, to taste
  • 1 head of iceberg or butter lettuce, leaves separated
  • Sesame seeds (for garnish, optional)
  • Sauté the vegetables: In a large skillet, heat the vegetable oil over medium heat. Add the chopped mushrooms, bell pepper, and shredded carrots. Cook for 3-4 minutes until the vegetables are tender.
  • Add the remaining ingredients: Stir in the chopped water chestnuts, green onions, soy sauce, hoisin sauce (if using), minced ginger, salt, and pepper. Cook for an additional 2-3 minutes, stirring well to combine.
  • Prepare the lettuce: While the filling cooks, rinse the lettuce leaves and pat them dry. Choose the largest leaves for wrapping.
  • Assemble the wraps: Spoon the veggie mixture into the center of each lettuce leaf. Wrap the leaves around the filling like a taco.
  • Serve: Serve the Veggie Lettuce Wraps immediately, garnished with sesame seeds if desired. Enjoy as a light lunch or a healthy snack!
