- 8 oz pasta (fettuccine, spaghetti, or penne)
- 2 tablespoons olive oil
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Red pepper flakes (optional, for heat)
- Fresh parsley, chopped (for garnish)
- Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.
