Vegetarian Lasagna is a wholesome, meat-free dish filled with layers of tender noodles, rich ricotta cheese, and a variety of sautéed vegetables. This recipe is perfect for family dinners or meal prep, offering a satisfying and nutritious alternative to traditional lasagna!

  • 12 lasagna noodles , 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1 cup spinach leaves
  • 1 carrot, grated
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil , 1 teaspoon dried oregano
  • 1 teaspoon dried basil , Salt and pepper, to taste
  • Cook the lasagna noodles: In a large pot, bring salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and set aside.
  • Prepare the vegetables: In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic for 2-3 minutes until softened. Add the zucchini, yellow squash, and grated carrot. Cook for another 5 minutes until the vegetables are tender. Season with oregano, basil, salt, and pepper.
  • Prepare the cheese mixture: In a medium bowl, combine the ricotta cheese, half of the mozzarella, and half of the Parmesan cheese. Mix well and season with a pinch of salt and pepper.
  • Assemble the lasagna: Preheat the oven to 180°C (350°F). In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles over the sauce. Spread a layer of the ricotta cheese mixture, followed by a layer of sautéed vegetables and spinach leaves. Repeat the layers two more times, ending with a final layer of noodles and marinara sauce on top.
  • Top with cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top of the lasagna.
  • Bake: Cover the lasagna with aluminum foil and bake for 35 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and golden brown.
