Vegetable Fried Rice is a quick and delicious meal made with chilled rice, fresh veggies, and a splash of soy sauce. Perfect as a standalone dish or as a side for any Asian-inspired meal!
- 2 cups cooked, chilled rice (preferably day-old)
- 1 tablespoon vegetable oil
- 1/2 onion, diced
- 1/2 cup carrots, diced
- 1/2 cup bell pepper, diced
- 1/2 cup peas (fresh or frozen)
- 2 green onions, sliced
- 2-3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- Optional Additions:
- 1/2 cup broccoli florets
- 1/2 cup mushrooms, sliced
- Sriracha or chili sauce, to taste
- Prepare the rice: For best results, use cold, day-old rice to prevent sticking.
- Stir-fry the vegetables: Heat vegetable oil in a large skillet or wok over medium-high heat. Add diced onions, carrots, and bell pepper, and cook for 3-4 minutes until softened. Add peas and cook for another 1-2 minutes.
- Add rice and seasonings: Add the cold rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps. Add soy sauce, sesame oil, salt, and pepper, tossing to coat everything evenly.
