  • 8 oz rice noodles or spaghetti
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup green onions, sliced
  • 1/4 cup chopped peanuts, for garnish
  • Fresh cilantro, for garnish
  • Spicy Peanut Sauce:
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • tablespoon rice vinegar or lime juice
  • 1-2 teaspoons sriracha or chili sauce (adjust to taste)
  • 1-2 tablespoons warm water (to thin sauce)
  • Cook the noodles: Cook the noodles according to package instructions. Drain and rinse with cold water to prevent sticking.
  • Prepare the sauce: In a small bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, and sriracha. Add warm water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency.
  • Stir-fry the vegetables: In a large skillet or wok, heat the vegetable oil over medium heat. Add bell pepper and shredded carrots, and cook for 3-4 minutes until slightly softened.
  • Combine and coat: Add the cooked noodles to the skillet with the vegetables, pour in the peanut sauce, and toss until everything is well-coated and heated through.
