- 4 large bell peppers (any color)
- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 pound (225 g) ground beef or turkey
- 1 cup cooked rice
- 1 can (14 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/2 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley, chopped (for garnish, optional)
- Prepare the peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
- Cook the filling: In a skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant. Add the ground beef or turkey, breaking it up with a spoon, and cook until browned.

- Stuff the peppers: Spoon the meat and rice mixture evenly into each bell pepper. Top with shredded cheese.
- Bake: Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
