- 2 ribeye or sirloin steaks (about 8 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, crushed
- Fresh thyme or rosemary sprigs (optional)
- 4 medium potatoes, peeled and cut into thin fries
- Oil for frying
- Fresh parsley, chopped (for garnish, optional)
- Prepare the fries: Heat oil in a deep pot or fryer to 350°F (175°C). Fry the potato sticks in batches for 3-4 minutes until golden and crispy. Drain on paper towels and sprinkle with salt. Keep warm.
- Season the steak: Pat the steaks dry with paper towels, then season generously with salt and pepper on both sides.
- Cook the steak: Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for 3-4 minutes per side for medium-rare, or to your desired doneness. During the last minute, add butter, garlic, and herbs, spooning the melted butter over the steaks as they finish cooking.
