- 1 pound (450 g) beef sirloin or tenderloin, thinly sliced
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz (225 g) mushrooms, sliced
- 1 tablespoon flour
- 1 cup beef broth
- 1 tablespoon Dijon mustard
- 1/2 cup sour cream
- Fresh parsley, chopped (for garnish, optional)
- Egg noodles or rice, for serving
- Season and cook the beef: Season the sliced beef with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef in batches and cook for 2-3 minutes per side until browned. Remove the beef from the skillet and set aside.
- Cook the vegetables: In the same skillet, add the remaining olive oil and sauté the diced onion for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.

- Add mustard and sour cream: Stir in the Dijon mustard and sour cream, mixing well. Add the cooked beef back into the skillet, stirring to coat in the sauce. Simmer for another 2-3 minutes until the beef is heated through.
