Ranch Pasta Salad is a refreshing and creamy dish perfect for picnics, barbecues, or potlucks. With a tangy ranch dressing, fresh vegetables, and a hint of crunch from bacon and cheddar cheese, this easy-to-make salad is a crowd-pleaser.
- 300g (10 oz) pasta (rotini or bowtie)
- 1/2 cup ranch dressing
- 1/2 cup mayonnaise
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, finely chopped
- 1/2 cup cooked bacon, crumbled (optional)
- 1 tablespoon fresh parsley, chopped
- Salt and pepper, to taste
- Cook the pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to cool it down. Set aside.
- Prepare the dressing: In a small bowl, mix the ranch dressing and mayonnaise until smooth. Add salt and pepper to taste.
- Assemble the salad: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, shredded cheddar cheese, red onion, and bacon (if using). Pour the ranch-mayo dressing over the salad and toss until everything is well coated.
