Vegetarian Sloppy Joes are a hearty, plant-based twist on the classic comfort food. Made with lentils and vegetables, they are flavorful, easy to prepare, and perfect for a quick dinner.
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup mushrooms, finely chopped
- 1 can (15 oz) lentils, drained and rinsed (or 1 1/2 cups cooked lentils)
- 1 cup tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce (or vegan alternative)
- 1 tablespoon brown sugar
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 4 hamburger buns
- Pickles or coleslaw, for serving (optional)
- Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until soft. Add minced garlic and bell pepper, and cook for another 3 minutes. Then, add the chopped mushrooms and cook for 4-5 minutes until they release their moisture.
