Vegetarian Sloppy Joes are a hearty, plant-based twist on the classic comfort food. Made with lentils and vegetables, they are flavorful, easy to prepare, and perfect for a quick dinner.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup mushrooms, finely chopped
  • 1 can (15 oz) lentils, drained and rinsed (or 1 1/2 cups cooked lentils)
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce (or vegan alternative)
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 4 hamburger buns
  • Pickles or coleslaw, for serving (optional)
  • Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until soft. Add minced garlic and bell pepper, and cook for another 3 minutes. Then, add the chopped mushrooms and cook for 4-5 minutes until they release their moisture.
  • Add lentils and sauce: Stir in the lentils, tomato sauce, tomato paste, Worcestershire sauce, brown sugar, chili powder, salt, and pepper. Mix well and let it simmer for about 5-7 minutes until heated through and thickened.
  • Prepare the buns: While the mixture is simmering, lightly toast the hamburger buns in a toaster or on a skillet until golden.
  • Assemble the sloppy joes: Spoon the vegetarian mixture onto the bottom half of each toasted bun. Top with pickles or coleslaw if desired, and then place the top half of the bun on.
