  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup molasses
  • 2 tablespoons brown sugar
  • 1 large egg, 1 cup milk (or plant-based milk)
  • 2 tablespoons melted butter (or vegetable oil)
  • Butter or oil for greasing the pan

  • Prepare the batter: In a large bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt. In a separate bowl, mix the molasses, brown sugar, egg, milk, and melted butter until well combined. Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Do not overmix; lumps are fine.
  • Heat the pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  • Cook the pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown and cooked through. Repeat with the remaining batter.
  • Serve: Stack the pancakes on a plate and serve warm with maple syrup, a dusting of powdered sugar, or whipped cream for an extra festive touch.
