  • 8 small flour or corn tortillas
  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 tablespoon butter or oil
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked breakfast sausage or crumbled bacon
  • 1 cup diced tomatoes
  • 1/2 cup diced avocado
  • 1/4 cup chopped fresh cilantro
  • Salsa, hot sauce, or sour cream for topping
  • Warm the tortillas: Heat a skillet over medium heat and lightly toast the tortillas on each side. Wrap them in a clean kitchen towel to keep warm.
