  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound (450 g) ground lamb or beef
  • Salt and pepper, to taste
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup beef or chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 4 cups mashed potatoes (prepared in advance)
  • 1/2 cup shredded cheddar cheese (optional)
  • Cook the meat: Preheat the oven to 400°F (200°C). In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 more minute.
  • Brown the meat: Add the ground lamb or beef to the skillet, breaking it up with a spoon. Season with salt and pepper and cook until browned, about 5-7 minutes.
  • Add vegetables and flavor: Stir in the diced carrots, peas, broth, tomato paste, Worcestershire sauce, and thyme. Simmer for 10 minutes, or until the vegetables are tender and the liquid has reduced slightly.
  • Assemble the pie: Spoon the meat mixture into a baking dish, spreading it out evenly. Top with the mashed potatoes, spreading them over the meat. If using, sprinkle shredded cheddar cheese on top.
  • Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the top is golden and bubbly.
