- 300g (10 oz) pasta (penne or rotini)
- 400g (14 oz) ground beef (or turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 cup salsa
- 1 cup beef or chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional: Fresh cilantro, avocado, and jalapeños for garnish
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.
- Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and cook for 2-3 minutes until softened. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat if necessary.
- Season the beef: Stir in the taco seasoning, salsa, and broth. Let the mixture simmer for 5 minutes, allowing the flavors to combine.
- Add the cheese and sour cream: Reduce the heat to low. Stir in the shredded cheddar cheese and sour cream, mixing until the cheese is melted and the sauce becomes creamy. Season with salt and pepper to taste.
- Combine pasta and sauce: Add the cooked pasta to the skillet and toss to coat it evenly with the taco-flavored sauce. Cook for an additional 2 minutes to heat through.
- Serve: Garnish with fresh cilantro, avocado slices, and jalapeños if desired. Serve hot and enjoy your flavorful Taco Pasta!
