Greek Goddess Bowl is a vibrant, Mediterranean-inspired bowl with quinoa, fresh veggies, chickpeas, and creamy feta, all topped with a zesty lemon-garlic dressing. A healthy and satisfying meal!
- 1 cup quinoa or couscous, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1 cup chickpeas, drained and rinsed
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- alt and pepper, to taste
- Cook the grains: Cook quinoa or couscous according to package instructions. Let it cool and fluff with a fork.
- Prepare the veggies: In a large bowl, combine the cherry tomatoes, cucumber, Kalamata olives, red onion, crumbled feta cheese, and chickpeas.
- Make the dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
