Peanut Noodles are a quick and flavorful dish made with noodles, fresh veggies, and a creamy, tangy peanut sauce. Perfect for a light lunch or dinner with a Thai-inspired twist.

  • 8 oz rice noodles or spaghetti
  • 1 cup shredded carrots
  • 1 bell pepper, thinly sliced
  • 1/2 cucumber, julienned
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup chopped peanuts, for garnish
  • Peanut Sauce:
  • 1/4 cup peanut butter , 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon chili flakes (optional, for heat)
  • 2-3 tablespoons warm water (to thin)
  • Cook the noodles: Cook the noodles according to package instructions. Drain and rinse with cold water to prevent sticking.
  • Make the peanut sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar (or lime juice), sesame oil, honey (or maple syrup), and chili flakes if using. Gradually add warm water to reach a smooth, pourable consistency.
  • Combine ingredients: In a large mixing bowl, toss the noodles with shredded carrots, bell pepper, cucumber, and peanut sauce until well coated.
  • Serve: Divide the Peanut Noodles into bowls, garnish with fresh cilantro and chopped peanuts. Enjoy as a light meal or side dish!
