- 8 oz rice noodles or spaghetti
- 1 cup shredded carrots
- 1 bell pepper, thinly sliced
- 1/2 cucumber, julienned
- 1/4 cup fresh cilantro, chopped
- 1/4 cup chopped peanuts, for garnish
- Peanut Sauce:
- 1/4 cup peanut butter , 2 tablespoons soy sauce
- 1 tablespoon rice vinegar or lime juice
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1/4 teaspoon chili flakes (optional, for heat)
- 2-3 tablespoons warm water (to thin)
- Cook the noodles: Cook the noodles according to package instructions. Drain and rinse with cold water to prevent sticking.
- Make the peanut sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar (or lime juice), sesame oil, honey (or maple syrup), and chili flakes if using. Gradually add warm water to reach a smooth, pourable consistency.
