  • 300g (10 oz) pasta (spaghetti or fettuccine)
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or coconut cream for a vegan option)
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: Red pepper flakes (for heat)
  • Cook the pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  • Make the garlic sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant (be careful not to burn it).
