Chicken Shawarma is a popular Middle Eastern street food featuring spiced, marinated chicken served in warm pita bread with fresh vegetables and a tangy yogurt sauce. Perfect for lunch, dinner, or a flavorful snack.

  • 1 pound (450 g) boneless, skinless chicken thighs
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • Salt and black pepper, to taste
  • For Serving:
  • Warm pita bread, Sliced cucumbers and tomatoes
  • Chopped fresh parsley, Yogurt sauce or tahini sauce
  • Marinate the chicken: In a large bowl, mix olive oil, lemon juice, garlic, cumin, paprika, turmeric, cinnamon, coriander, salt, and pepper. Add the chicken thighs, tossing to coat. Cover and marinate in the fridge for at least 1 hour (or overnight for best flavor).
  • Cook the chicken: Preheat a grill pan or large skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes per side, until golden brown and fully cooked. Remove the chicken from the heat and let it rest for a few minutes before slicing into thin strips.
  • Assemble the shawarma: Place the sliced chicken on warm pita bread. Add cucumbers, tomatoes, parsley, and a drizzle of yogurt or tahini sauce.
