- 1 can (14 oz) young jackfruit, drained and rinsed
- 1 tablespoon olive oil
- 1/2 onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup BBQ sauce
- lt and pepper, to taste
- 8 small corn or flour tortillas
- Optional Toppings:
- Shredded lettuce

- Prepare the jackfruit: Drain and rinse the jackfruit. Using your hands or a fork, shred the jackfruit pieces to resemble pulled pork.

- Add jackfruit and BBQ sauce: Add the shredded jackfruit to the skillet and pour in the BBQ sauce. Stir well to combine, and cook for 10-12 minutes, until the jackfruit is tender and fully coated with the sauce. Season with salt and pepper to taste.
- Assemble the tacos: Warm the tortillas in a dry skillet or microwave. Place a generous spoonful of BBQ jackfruit on each tortilla, then add your favorite toppings like lettuce, avocado, cilantro, and a squeeze of lime.
- Serve: Enjoy your BBQ Jackfruit Tacos with extra BBQ sauce or vegan sour cream on the side.
